Bloody Mary dip

  • 30
    ml
    olive oil
  • 2
    garlic cloves
  • 6
    ripe tomatoes
  • 8
    peppadews
  • 30
    ml
    vodka
  • Tabasco to taste
  • 15
    ml
    Italian parsley and basil
  • salt and milled pepper to taste
 

Method

7 minutes
 
Heat oil and sauté garlic for 2 minutes.
Add tomatoes and peppadews and sauté for 5 minutes, until the tomatoes melt and become pulpy.
Add vodka and Tabasco and cook for a further minute. Remove from heat.
Purée until smooth.
Stir in herbs and season to taste.
Serve cold or at room temperature with grilled and cubed chicken and avocado on sticks.
