Biltong and butternut spread sandwiches

    butternut, cooked and mashed
  • 125
    pecorino cheese, finely grated
  • 125
    smooth cream cheese
  • fresh thyme, chopped
  • ground black pepper
  • biltong slices, not too dry
  • 8
    slices brown bread, buttered


Mix the butternut, cheeses and thyme together.
Season and chill until ready to serve.
(You can prepare it and keep it in the fridge for a couple of days.)
Spread the butternut over 4 slices of bread and top with thin shavings of biltong.
Close up the sandwiches with the remaining bread and cut into triangles or soldiers.
Great to serve as nibbles, or for lunch with a big salad.
