    mirin (rice vinegar)

    soy sauce
  • 45
    ml
    sake (rice wine)
  • 15

    sugar
  • 250
    g
    beef fillet, cut into small, thin pieces
  • 15

    sunflower oil
  • lettuce leaves for garnishing
  • 150
    g
    vermicelli noodles, cooked
  • 5
    ml
    chilli flakes
  • diced limes for garnishing
 

Method

 
Mix mirin, soy sauce, saké and sugar in a bowl, stirring until sugar has dissolved. Add beef and marinate for 30 minutes. Heat oil in a wok or cast-iron frying pan, add beef and stir-fry for 1 minute, then add marinade and stir-fry for 2 minutes. Place lettuce in 4 sake cups, fill with noodles and top with beef. Pour over pan juices, sprinkle with chilli flakes and garnish with limes.
