Beef palava sauce

    palm oil
  • 500

    beef (boneless), cut into cubes
  • 1
    onion, sliced
  • garlic, crushed
  • 15
    ml
    crushed ginger
  • salt to taste
  • 30
    ml
    tomato paste
  • 2
    chillies, chopped
  • 2
    tomatoes, chopped
  • 2
    carrots, diced
  • 1
    bunch spinach, washed and shredded
  • 15
    ml
    agushi powder
 

Method

 
Steam beef with half the onion, garlic, ginger and salt until soft, set aside. In another saucepan heat oil and sauce remaining onions, garlic and ginger. Add tomato paste. Blend chillies with tomatoes and add to stew. Add cooked beef and carrots and simmer for 15 minutes. Add the agushi powder (or use 2 beaten eggs) and stir gently. Finally add spinach, cook for just a few minutes keeping the green colour of the spinach. Check seasoning. Serve with boiled ripe plantain or yam.
