Beef and pepper stir-fry

beef pepper stir-fry

Ingredients

    ml
    extra virgin olive oil
  • 1
    piece fresh ginger- peeled and chopped
  • 2
    garlic cloves- crushed
  • 4
    spring onions- chopped
  • 1
    red pepper- seeds removed and thinly sliced
  • 350
    g
    lean beef- cut into strips
  • 1
    celery stalk- thinly sliced
  • 1
    carrot- scraped and cut into julienne strips
  • 15
    ml
    dark soya or Worcestershire sauce
  • salt and freshly ground black pepper to taste
 

Method

Heat the oil in a large heavy-based frying pan until very hot.

Add the ginger, garlic and spring onions and stir-fry for two minutes.

Add the pepper and beef strips and stir-fry for another three minutes or until the meat is no longer pink on the outside.

Add the vegetables and soy sauce and stir-fry for about another three minutes.

Season to taste with salt and pepper and serve immediately with brown rice.
