Beef-stroganoff

Ingredients

  • 500
    g
    fillet steak, cut into thin strips, or ostrich fillet
  • 1
    onion, peeled and finely chopped
  • 200
    g
    mushrooms, sliced
  • 250
    ml
    cream
  • 30
    g
    butter
  • olive oil
  • 200
    g
    brown, wild or basmati rice
  • 500
    ml
    water
 

Method

15 mins
 
Put the rice on to cook according to packet instructions - it shuold not take more than 15 mins.

Whilst the rice is cooking, slowly fry the onion until soft, add the mushrooms and cook through. Put this to one side. Fry the fillet in a hot pan with a little oil for 3 to 4 minutes to seal. When it is lightly brown on the outside and rare in the middle, add the onion and mushrooms and stir together for 1 to 2 minutes. Pour in the cream and bring to the boil. Serve immediately.
