Basmati rice and split peas

    yellow split peas or lentils
  • 750
    ml
    boiling water
  • 250
    ml
    basmati rice
  • 750
    ml
    boiling water
  • 5
    ml
    salt
 

Method

 
Soak yellow split peas or lentils in cold water to cover for 30 minutes, then drain. Place in a saucepan containing boiling water. Reduce heat and simmer, covered, for 20 minutes. Meanwhile, place basmati rice in boiling water and 5 ml (1 tsp) salt in another saucepan and bring to boil, then reduce heat and simmer for 15 minutes. Drain. Combine rice with split peas and serve.
