Basic roast chicken

    PnP chickens

    drizzle olive oil
  • 3
    pinches salt and milled pepper or to taste
  • 1
    lemon - cut into chunks
  • 1
    PnP onion - cut into chunks
  • 2
    garlic heads - crushed
  • 3
    bay leaves
  • 3
    sprigs PnP thyme
  • 500
    baby potatoes


Preheat oven to 180°C.

Rub chickens with olive oil and season.

Stuff with lemon, onion, garlic and herbs and place in a roasting tray with potatoes.

Cover with foil and roast for 45 minutes.

Uncover and roast for another 25 minutes.

Serve 1 chicken with potatoes as a roast.

Cool remaining chickens, remove meat from bones, discarding skin, and divide in thirds to form basic cooked chicken.
