Basic curry powder

    dried red chillies
  • 120
    ml
    coriander seeds
  • 60
    ml
    cumin seeds
  • 2
    ml
    fenugreek seeds
  • 10
    ml
    black mustard seeds
  • 10
    ml
    black peppercorns
  • 10
    ml
    garam masala
  • 15
    ml
    ground turmeric
  • 5
    ml
    ground ginger
  • 4
    curry leaves
 

Method

 

Remove stalks and seeds from chillies.
Dry fry with next six ingredients, shaking pan, so as not to burn spices and to release the rich aroma.
Grind to a powder in a mortar and pestle or coffee grinder, then stir in ginger and turmeric.
