Banana muesli muffins

Ingredients

    g
    cake flour
  • 15
    ml
    baking powder
  • 50
    ml
    brown sugar
  • 100
    g
    nut muesli
  • 1
    large egg
  • 160
    ml
    milk
  • 80
    ml
    sunflower oil
  • 50
    ml
    honey
  • 2
    ripe bananas, mashed
 

Method

20 minutes
 
Sift the flour and baking powder into a bowl.
Add a pinch of salt.
Stir in the sugar and three-quarters of the muesli.
Whisk remaining ingredients in a separate bowl.
Pour into the dry ingredients and stir to bombine.
Don't over-stir - the mixture should still be slightly lumpy.
Spoon mixture into greased muffin pans two-thirds of the way.
Sprinkle with reserved muesli.
Bake in a preheated 200 °C oven for 15 to 20 minutes until cooked through.
Once cool, cut in half and spread with butter if desired.
