100.00 g margarine
80.00 g white sugar
2.00 eggs — extra large, beaten
3.00 bananas — large, ripe
225.00 g flour — wholewheat
2.00 ml cinnamon — ground
10.00 ml Baking powder
75.00 g dates — chopped
50.00 g pecan nuts

Method:

Preheat the oven to 180 ºC (350 ºF).

Cream the margarine and sugar together until light and creamy. Add the beaten egg a little at a time, stirring continuously.

Mash the bananas and add to the margarine mixture.

Sift the wholewheat flour, cinnamon and baking powder together and fold into the margarine mixture. Also add the bran left behind in the sieve, the chopped nuts and pecan nuts. Mix well and turn into a greased 23 x 13 x 7 cm loaf pan.

Bake for about one hour or until a testing skewer comes out clean. Cool slightly in the tin before turning out onto a wire rack. Store in an airtight container.
