  • MUFFINS
  • 375
    ml
    cake flour
  • 10
    ml
    baking powder
  • 2

    bicarbonate of soda
  • 7

    mixed spice
  • 2
    ml
    salt
  • 125
    ml
    soft brown sugar
  • 2
    large eggs, lightly beaten
  • 250
    ml
    buttermilk
  • 250
    ml
    banana, cut into bits
 

Method

20-25 minutes
 
1. Combine the topping ingredients and set aside. 2. MUFFINS: Sift the dry ingredients together and add the sugar. 3. Mix eggs, buttermilk and banana. Combine lightly with the dry mixture. 4. Spoon into a greased muffin pan. Evenly divide topping between muffins and bake in a preheated 180 ºC oven for 20 to 25 minutes or until a skewer inserted comes out clean. VARIATION Substitute the walnuts in the topping with 200 ml toasted muesli.
