Ingredients (15)

TOPPING
80.00 g walnuts — chopped
15.00 ml flour — cake
45.00 ml brown sugar — soft
2.00 ml cinnamon — ground
40.00 g butter — soft
15.00 ml honey
MUFFINS
375.00 ml flour — cake
10.00 ml Baking powder
2.00 ml Bicarbonate of soda
7.00 ml mixed spice — ground
2.00 ml salt
125.00 ml brown sugar — soft
2.00 eggs — large, slighly beaten
250.00 ml Buttermilk
250.00 ml bananas — chopped

Method:

1. Combine the topping ingredients and set aside.
2. MUFFINS: Sift the dry ingredients together and add the sugar.
3. Mix eggs, buttermilk and banana. Combine lightly with the dry mixture.
4. Spoon into a greased muffin pan. Evenly divide topping between muffins and bake in a preheated 180 ºC oven for 20 to 25 minutes or until a skewer inserted comes out clean.

VARIATION
Substitute the walnuts in the topping with 200 ml toasted muesli.
