Banana chutney

    large onions, finely chopped
  • 13
    firm ripe bananas, cut into pieces
  • 500
    g
    tomatoes, chopped
  • 250
    ml
    fruitcake mix
  • 2
    green peppers, seeded and chopped
  • 750
    ml
    brown vinegar
  • 2
    ml
    cayenne pepper
  • 125
    ml
    water
  • 15
    ml
    salt
  • 500
    ml
    brown sugar
  • 15
    ml
    ground ginger
 

Method

1 hour
 

Place all the ingredients in a large pot and heat slowly until the sugar has dissolved.
Bring to boil and simmer gently for about one hour or until the mixture is no longer runny.
Stir occasionally. Spoon into sterilised glass jars and seal while hot.
Leave to mature for three weeks before using.
Makes about 2.5 litres chutney.
