Banana caramel pudding

    butter
  • 200
    g
    sugar
  • 2
    ml
    salt
  • 600
    ml
    milk
  • 25
    ml
    custard powder
  • 5
    ml
    vanilla essence
  • FILLING
  • 200
    g
    Tennis biscuits
  • 6
    bananas, halved
  • 410
    g
    gooseberries
  • 250
    ml
    cream, stiffly whipped
  • flaked almonds, roasted
 

Method

 
Melt the butter, sugar and salt, stirring continuously, until the sugar is completely dissolved and has begun to brown. Heat 500 ml of the milk and slowly add to the mixture. Stir until all the lumps have dissolved. Mix the custard powder with the remaining milk, add to the mixture and bring to the boil, stirring continuously. Add the vanilla essence. Arrange alternating layers of biscuits, bananas, gooseberries and caramel sauce in a serving dish. Decorate with the cream and flaked almonds. Serves 6.
