Banana bread with white chocolate

    butter at room temperature

    castor sugar
  • 1
    egg
  • 2
    bananas - mashed
  • 1
    tsp
    vanilla essence
  • 250

    cake flour
  • 1
    tsp
    baking powder
  • 1/4
    tsp
    salt
  • 50
    g
    white chocolate buttons
  • 50
    g
    Amaretto biscuits - broken into pieces
  • 40
    g
    almond flakes
  • Crème Fraiche for serving

Preheat the oven to 180 °C. Butter a medium loose bottom flan pan.

Cream the butter and sugar in a bowl until light and fluffy. Then add the egg and mix it in with the butter and sugar mix.

Mix the bananas and vanilla essence into the mixture.

Add all the dry ingredients gently – be careful not to over mix – and pour into prepared pan.

Bake for 30 minutes or until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes.

Serve with a sprinkling of icing sugar and a few dollops of crème fraiche.
