Ingredients (12)

345.00 g flour — cake
5.00 ml Baking powder
10.00 ml Bicarbonate of soda
320.00 g sugar
125.00 ml pecan nuts — chopped
125.00 g butter
2.00 eggs — large
250.00 ml Buttermilk
250.00 ml bananas — ripe, mashed
5.00 ml vanilla — essence

SAUCE

125.00 ml cream
200.00 g white chocolate — broken into pieces

Method:

Grease a 20 x 30 cm baking dish.

Sift the flour, baking powder and bicarbonate of soda together in a large mixing bowl.

Stir in the sugar and nuts.

Beat the butter until light. Beat in the eggs.

Stir in the buttermilk, bananas and vanilla essence.

Stir into the dry ingredients and mix until well combined.

Pour into the baking dish and bake in a preheated 180 °C oven for 30-35 minutes, until a skewer comes out clean.

To prepare the sauce, place the cream and chocolate in a saucepan and heat over a low heat.

Once the mixture is hot, stir until smooth.

Don’t allow the sauce to boil.

Remove from the heat.

Serve the pudding hot, smothered in creamy chocolate sauce.
