Ingredients (10)

6.00 white bread — day-old, crusts removed
8.00 bananas — sliced
65.00 ml butter
1.00 lemon — zest and juice
125.00 ml caramel brown sugar
250.00 ml sultanas
3.00 eggs — extra-large
500.00 ml milk
salt — pinch
100.00 ml castor sugar

Method:

Preheat the oven to 180 ºC and butter a 22 x 27 cm oven dish, or spray with non-stick spray. Butter the bread slices and cut each slice into four triangles. Sprinkle the banana slices with lemon juice. Arrange a layer of bread triangles in the bottom of the dish. Arrange a layer of banana slices on top, sprinkle with a layer of sugar, then a few sultanas. Repeat until all the ingredients have been used. Beat the egg yolks and add the milk, lemon rind and salt. Pour the egg mixture over the pudding and bake for 45-60 minutes until set. Beat the egg whites until soft peaks are formed, then beat in spoonfuls of the castor sugar. Beat until stiff. Spoon the meringue on top of the pudding and bake for a few minutes until the meringue begins to brown.
