Baked raisin pudding

    extra-large eggs
  • 125

    raisins
  • 125
    ml
    sultanas

    ml
    self-raising flour

    milk
 

Method

40-50 mins
 
Preheat the oven to 180ºC (350ºF). Spray a 24 cm ovenproof dish with non-stick spray. Cream the butter and add small quantities of the sugar at a time while beating continuously. Add the cinnamon and mix. Add the eggs one by one, beating well after each addition. Add the raisins and sultanas and mix. Sift the self-raising flour and add alternately with the milk. Fold in thoroughly and turn the mixture into the prepared dish. Bake for 40-50 minutes or until the pudding is done and brown on top. Serves 4-6.
