Baked eggs with mushroom duxelle

    g
    mushrooms
  • 5
    ml
    butter
  • 3
    ml
    mixed herbs
  • 3
    ml
    parsley, finely chopped
  • salt and black pepper
  • BAKED EGGS
  • 4
    large eggs
  • 30
    ml
    cream
 

Method

 
Chop mushrooms very finely. In a pan, melt the butter, and add mushrooms, herbs and seasoning. Cook until all the moisture has evaporated. Divide mixture in half, and place in large ramekins, making a well in the middle of each one. BAKED EGGS: Break two eggs into each ramekin, and top each one with 15 ml cream. Bake in a preheated oven at 180 ºC for 6 to 8 minutes or until set.
