Baked custard

Ingredients

    ml
    coconut milk
  • 250
    ml
    milk
  • 1
    cinnamon stick
  • 4
    cloves
  • 4
    large eggs, lightly beaten
  • 30
    ml
    castor sugar
  • 2
    ml
    salt
  • 15
    ml
    cinnamon sugar
  • 30
    ml
    toasted sesame seeds
 

Method

40 minutes
 
1. Place coconut milk and milk in a saucepan. Add cinnamon stick and cloves and heat gently. When milk begins to steam, remove from the heat. (Do not boil.) Remove the cinnamon stick and cloves. 2. Mix together eggs, sugar and salt and stir into the milk mixture. 3. Pour into a greased ovenproof dish and place the dish in a roasting pan that has been half filled with hot water (a bain marie). Place carefully into the preheated 180 ºC oven and bake until set - about 40 minutes. 4. Remove from the oven and sprinkle with cinnamon sugar and toasted sesame seeds. Serve warm or cold, drizzled with honey or syrup.
