Baked beetroot

    small raw beetroots, washed and halved

    cloves garlic, peeled and bruised
  • 1
    x 5 cm piece fresh root ginger, cut into thin strips
  • 30
    mint, roughly chopped
  • few sprigs of thyme

    olive oil
  • 400
    balsamic vinegar

To make the cooking bag, use a piece of heavy-duty foil or fold the foil in half to make it stronger.
Place the beetroots in the middle of the foil, sprnkle with garlic, ginger, mint and thyme and season to taste.
Fold the foil to make a bag and add the oil and vinegar.
Bake in a preheated 200 °C oven for over an hour.
Serve with tasty bread or grilled fish.
This dish can also be cooked in a covered casserole dish.
