Ingredients

  • 500
    g
    red speckled beans or kidney beans
  • 500
    ml
    white grape vinegar
  • 600
    g
    white sugar
  • 5
    ml
    salt
  • 50
    ml
    cornflour, blended with a little water to form a paste
 

Method

 
Soak beans overnight in cold water or cover with boiling water, boil for about two minutes and then soak for one hour. Pour off soaking water and cover beans with fresh water. Boil until the beans are soft and pour off any leftover water. Add the remaining ingredients and boil till the sauce thickens slightly and the mixture has cooked through. Spoon into sterilised jars and seal while still hot. Makes about 1,5 litres baked beans.
