Baked bean soup

    oil
  • 125

    streaky bacon, chopped into small cubes
  • 1
    medium onion, finely chopped
  • 1
    chicken stock cube
  • 420
    g
    baked beans in tomato sauce
  • 400
    g
    chopped tomatoes
  • 5
    ml
    chilli sauce
  • salt and ground black pepper
  • pinch sugar
  • 10
    ml
    chopped fresh parsley
 

Method

 
Heat the oil and sauté; the bacon and onion until lightly cooked Add the stock cube, dissolved in 300 ml boiling water, baked beans and tomatoes. Reduce heat and simmer slowly for 10 minutes. Add chilli sauce, and season to taste with salt, pepper and sugar. Stir in the parsley and serve steaming hot with bread rolls.
