Bacon sandwiches

    hard-boiled eggs, shelled and mashed

    rashers cooked bacon, finely chopped
  • salt and pepper

    slices white bread, buttered

Mix the mashed eggs, mayonnaise and bacon together and season to taste with salt and pepper. Make sandwiches with the mixture. Serve plain or toasted, or dip each sandwich in an egg and milk mixture – 1 egg for every 100 ml milk – and fry in oil until golden brown. Serve immediately. Serves 2.
