Bacon pan-fry

    bacon, finely chopped

    large onion, sliced into rings

    clove garlic, crushed
  • 100
    fresh button mushrooms, sliced
  • 2
    large potatoes, peeled and diced
  • 3
    medium carrots, scraped and cut into strips
  • 200
    courgettes, rinsed and sliced into rings

    chicken stock
  • salt and pepper to taste

Fry the bacon in a large pan until done, but not crisp. Add the onion and garlic and sauté until soft. Add the mushrooms and stir-fry until pale brown. Add the potatoes, carrots and courgettes and stir-fry until glossy (add a little oil if necessary). Add the chicken stock and simmer until the vegetables are done but still crisp. Season with salt and pepper, Serve hot. Serves 4
