Bacon bites

    bacon

    onion, finely chopped

    cake flour

    parsley, finely chopped

    Cheddar cheese, finely grated

    egg, beaten

    milk
  • oil for deep-frying
 

Method

 
Fry the bacon in a pan until crisp. Drain on paper towelling and chop finely. Sauté the onion in the pan fat until soft. Set aside. Sift all the dry ingredients together. Add the bacon, onion, parsley and Cheddar cheese and mix well. Beat the egg and milk together and add to the cheese mixture. Blend to form a fairly slack batter. Heat sufficient oil in a pan for deep-frying and fry teaspoonfuls of the batter until golden brown and cooked inside. Drain on paper towelling.
