Bacon and banana on wholewheat

    slices of wholewheat bread, toasted
  • 40
    ml
    butter
  • 8
    rashers bacon
  • 2
    bananas
  • 10
    ml
    lemon juice
  • sea salt and milled black pepper
  • 8
    sprigs watercress
 

Method

 
Butter toast fairly thickly. Fry bacon until crisp in a heated pan and drain on paper towels or crumpled brown paper. Peel and slice bananas diagonally and sprinkle with lemon juice, pepper and a dash of salt. Layer bacon and banana on toast and top with watercress sprigs and serve immediately.
