    aubergine

    ml
    sesame oil
  • 125
    ml
    yoghurt of tahina sauce
  • 30
    ml
    chopped parsley
  • 1
    garlic clove, crushed
  • 30
    ml
    lemon juice
  • half cucumber to garnish
  • salt and black pepper
 

Method

Bake or roast the brinjals in their skin at 180 degrees Celsius for about 1 hour, or until soft, then immerse immediately in cold water with lemon juice to preserve their colour. Cool, then peel, drain the juice and mash until smooth.
Add the rest of the ingredients and mix well. Place the mixture in a ceramic dish to serve. Serve with pita bread.
