  • 1
    small onion, finely chopped
  • 15
    ml
    butter
  • 5
    ml
    masala OR curry powder
  • 2
    large, ripe avocados, halved, stoned and skinned
  • 15
    ml
    lemon juice
  • 10
    ml
    grated lemon rind
  • salt and freshly ground black pepper
  • 1
    ml
    cayenne pepper
  • 1
    ml
    nutmeg
  • 250
    g
    cottage cheese with chives
  • 25
    ml
    finely chopped coriander leaves (optional)
 

Method

 
Sauté the onion in the butter until tender and translucent.
Add the masala and stir-fry for another minute. Cool well.
Finely dice the avocados or process in the food processor until smooth.
Add the lemon juice and rind and season with salt and black pepper, cayenne pepper and nutmeg.
Add the onion mixture and remaining ingredients.
Mix well and chill until needed.
Makes about 750 ml.
