avocado chocolate mousse

  • 1
    ripe avocado
  • 3-4
    Tbs
    cocoa powder- sifted
  • 3-4
    Tbs
    fructose or honey
  • 2.5
    ml
    vanilla extract or essence
  • 1
    pinch
    salt
 

Method

Scoop out the flesh of the avocado and whiz it up with the rest of the ingredients in a food processor for a minute or two.

Scrape the mousse from the sides and whiz for another minute until smooth. Taste and adjust the cocoa and sugar to taste.

Refrigerate until ready to serve.
