    Icing: margarine
  • 500
    ml
    icing sugar
  • 45

    lemon juice
  • 6
    drops of yellow food colouring

Preheat the oven to 180 °C. Grease two 18-20 cm cake tins. Sift together the dry ingredients. Cream the butter and gradually add the sugar. Add the eggs, milk, lemon juice and avocado. Add the dry ingredients and almonds and mix well. Spoon into the prepared tins. Bake for 30-35 minutes or until a testing skewer inserted in the middle comes out clean. ICING Cream the margarine and gradually add the icing sugar while beating. Beat until the mixture is light and fluffy. Add the lemon juice and food colouring. Use to sandwich together the cooled cake layers and cover the cake. Makes a large cake.
