Avocado and salmon crêpes

    crêpes
  • sour cream, lemon juice, black pepper and dill for serving
  • FILLING
  • 3
    avocados, diced
  • 1
    bunches spring onions, chopped
  • 1
    bunch fresh dill, chopped
  • 500
    g
    cream cheese
  • 300
    g
    smoked trout or smoked angelfish
  • 1
    lemon, juice
  • dash cayenne pepper
 

Method

 
FILLING: Mix ingredients together lightly and set aside. Place a crêpe on a serving platter and spread liberally with fish mixture. Continue layering crêpes and filling, ending with a crêpe. Chill for 15 minutes, then slice and serve with sour cream flavoured with a little lemon juice, black pepper and dill.
