Asian beef and noodle broth

    olive oil

    lean beef, diced
  • 1
    Litres
    beef stock
  • 250
    g
    fresh mushrooms, chopped
  • 400
    g
    Asian noodles, cooked
  • 10
    g
    dried seaweed, reconstituted
 

Method

 
Heat olive oil in a saucepan, add beef and stir-fry for a few minutes to brown. Add stock and mushrooms. Simmer for 15 minutes. Divide noodles between 4 soup bowls, pour broth over noodles and add seaweed. Serve piping hot.
