250.00 g jam — smooth, apricot
water
lemon juice — to taste

Method:

1. Place jam and a little water (15 ml to start with) in a saucepan and allow jam to dissolve over a low heat. Strain through a wire sieve and return to rinsed-out pan. Bring to the boil and cook gently until glaze is clear and of the desired consistency. Add a squeeze of lemon juice to counter sweetness of jam. Use glaze while hot. If jam is too thin, omit water.
