Apple loaf with hazelnuts

    self-raising flour

    baking powder

    mixed spice

    seedless raisins
  • 125
    ml
    caramel brown sugar
  • 50

    hazelnuts, finely chopped
  • 225
    g
    green apples, peeled, cored and finely chopped
  • 2
    eggs
  • 50
    g
    butter, melted
  • 75
    ml
    apple juice
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Spray a 23 x 13 cm loaf tin with non-stick spray and line the bottom with wax paper. Sift the self-raising flour, baking powder and spices together and add the raisins, sugar, nuts and apple. Mix. Beat the eggs, melted butter and apple juice together and add to the dry ingredients. Turn the mixture into the prepared loaf tin, spreading it evenly. Bake for about 1 1/4-1 1/2 hours or until a testing skewer comes out clean when inserted into the centre of the loaf. Turn out onto a wire rack to cool completely.
