For the topping: Mix together pecan nuts with the cinnamon and brown sugar.
For the muffins: Sieve the cake flour, wheat bran, baking soda (bicarbonate of soda) and salt.
Whisk together the buttermilk (or plain yogurt) with the sunflower oil, vanilla essence and egg.
Add the yogurt mixture to the flour mixture and stir until well blended. Fold in the grated apple.
Spoon into a prepared 12 hole muffin pan and sprinkle the topping over before baking for 20 minutes until well risen and golden brown. Allow to cool before eating.
Best made and eaten on the same day.
