Apple cinnamon crumble muffins

Ingredients (14)

1 cup brown sugar
1/2 cup butter — softened
2 eggs
5 ml vanilla — essence
1 1/2 cup flour
1 tsp baking soda
1 tsp salt
cinnamon — ground
1 1/2 cup apples — grated
3/4 cup yoghurt
2 Tbs butter
3 Tbs flour
1 tsp sugar
1/2 tsp cinnamon — ground

Method:

Preheat oven to 180ºC.

In an electric mixing bowl cream the sugar and butter until pale. Add an egg one at a time and mix until incorporated. Add the vanilla essence and mix.

Add the flour, baking soda, salt and cinnamon. Mix until just incorporated. Next add the grated apple and yoghurt. Mix through and scoop the muffin liners ¾ of the way full.

For the crumble topping gently rub the butter and flour together until crumbly. Add the sugar and cinnamon – rub it through and use a teaspoon to add on top of the scooped batter.

Bake in the oven for 18 minutes, leave to cool.
