    kg
    green apples, peeled, cored and coarsely chopped
  • 250
    ml
    apple vinegar
  • 1
    lemon, thinly sliced rind
  • 500
    ml
    yellow sugar
  • 5
    ml
    ground cinnamon
 

Method

 
Place the apples, vinegar and lemon rind in a large glass or microwaveproof dish. Cover lightly with plastic wrap and microwave for 10-12 minutes on 100 per cent power until the apples are tender. Press through a sieve or chop finely in a food processor. Return the apples to the glass bowl and add the sugar and cinnamon. Microwave for about 15 minutes on 100 per cent power, stirring once or twice to dissolve the sugar. Transfer immediately to clean, sterilised bottles and seal.
