Apple and spice cupcakes

    eggs, preferably omega-3 rich

    cake flour
  • Pinch salt

    ground cinnamon

    ground nutmeg
  • Pinch cloves

    baking powder

    bicarbonate of soda

    oat bran
  • 250
    ml
    grated carrot
  • 2
    medium apples, peeled and grated

    sultanas
 

Method

1. Preheat the oven to 160 deg Celsius.
2. Line 2 standard size 12-hollow muffin pans with paper cases.
3. Use an electric beater to cream the oil, sugar and eggs together for two minutes, until light and fluffy.
4. Sift the flour, salt, spices, baking powder and bicarbonate of soda into a separate bowl.
5. Add the oat bran to the flour mixture and stir this into the egg mixture by hand, using a wooden spoon.
6. Fold in the raw carrots, the apple and sultanas.
7. Spoon heaped tablespoons of dough into each paper cup and bake for 20 to 30 minutes, or until a skewer inserted in the centre comes out clean.
8. Cool in the muffin pan for 5 minutes, and then remove from the pan and leave to cool completely on a wire rack.
