Apple and sausage roll

  • egg yolk for brushing on top
 

Method

Preheat the oven to 190 ºC (375 ºF). Spray a 22 x 11 cm loaf tin with non-stick spray. Sauté the onion in a little oil until soft. Cool. Remove the sausage meat from the casing and mix with the apple, parsley and onion. Combine the cake flour, baking powder and salt in a mixing bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Add the egg and mix. Add just enough ice water to form a stiff, manageable dough. On a lightly floured surface, roll the dough into an oblong about 6 mm thick. Spread the dough with the sausage mixture, leaving a 2,5 cm edge uncovered all the way around. Brush the edge with water and roll up the dough starting from one of the short ends. Brush with lightly whisked egg yolk and place in the loaf tin. Bake for 25-30 minutes or until golden brown on the outside and cooked inside. Slice and serve with a salad. Serves 4-6.
