Ingredients (13)

125.00 g butter
225.00 ml castor sugar
1.00 eggs — extra large, lightly beaten
5.00 ml vanilla — essence
375.00 ml apples — purée
10.00 ml Bicarbonate of soda
500.00 ml flour — cake
2.00 ml cloves — ground
3.00 ml cinnamon — ground
salt — pinch
250.00 ml dates — finely chopped
250.00 ml walnuts — chopped
250.00 ml sultanas

Method:

Preheat the oven to 180 °C and spray a 20 x 10 x 7 cm loaf tin with non-stick spray or butter lightly.
Cream the butter and sugar together until light and fluffy and beat in small quantities of the egg. Add the vanilla essence to the apple puré;e (made with four large apples) and beat into the butter mixture.
Sift the bicarbonate of soda through a fine sieve to remove any lumps and sift over the butter mixture along with the remaining dry ingredients. Mix lightly, add the dates, nuts and sultanas and mix.
Turn into the prepared loaf tin and bake for one hour or until a testing skewer comes out clean. Cool slightly in the tin, turn out and slice.
Makes a large loaf.
