Apple and cottage cheese pudding

    cottage cheese
  • 100
    ml
    sugar

    extra-large eggs, separated
  • 15

    cake flour
  • 1
    ml
    cinnamon
  • 2
    ml
    vanilla essence
  • 1
    juice and rind of lemon
  • 50
    g
    sultanas
  • 50
    g
    almond flakes
  • 2
    green apples, peeled and grated
 

Method

 
Preheat the oven to 200 ºC (400 ºF). Spray a 22 x 20 x 4 cm ovenproof dish with non-stick spray. Blend the cottage cheese with 80 ml sugar. Add the egg yolks and mix. (Reserve the egg whites.) Add the remaining ingredients and mix lightly. Beat the egg whites till soft peaks form. Add the remaining sugar and beat well. Fold into the cottage cheese mixture. Turn into the prepared dish and bake for 30 minutes or till done and brown on top. Serves 6.
