Apple and berry coconut crumble puddings

  • CRUMBLE:

    desiccated coconut
  • 1/4
    cup
    fresh coconut shavings
  • 80
    g
    flaked almonds
  • 1/4
    cup
    oats
  • 3
    tsp
    Demerara sugar
  • 2
    Tbs
    flour
  • 60
    g
    butter, melted
  • 2
    Tbs
    honey
  • FILLING:
  • 1
    400g tin pie apples, drained
  • 200
    g
    mixed berries
  • icing sugar for dusting
  • fresh coconut flakes to garnish
 

Method

Preheat the oven to 160°C.

For the crumble

In a large bowl, stir together all the ingredients until well combined.

For the filling

Arrange the apples and berries in an heatproof dish. Top the filling mixture with the crumble and bake for 25–30 min or until golden.

To serve

Serve warm, dusted with icing sugar and garnished with fresh coconut flakes.
