    apples, peeled, sliced and sprinkled with lemon juice and sugar

  • apricot jam for glazing
 

Method

Preheat oven to 180 ºC (350 ºF). Grease a 30 x 22 cm pie dish. Heat the margarine and milk in a saucepan over low heat, taking care not to boil. Whisk eggs, sugar and essence in a warmed bowl until creamy. Sift flour and fold into egg mixture, followed by margarine and milk mixture. Pour into prepared baking dish. Arrange apple slices in rows on top and sprinkle almonds, fruit and peel over. Mix cinnamon and sugar together and sprinkle over the top. Bake for 30 minutes. Glaze with warmed apricot jam. Serve hot or cold with custard or whipped cream.
