    lemon, juice and rind

    flaked almonds, toasted

Method

 
Slowly heat the sugar, water, honey and lemon juice until the sugar has dissolved.
Bring to the boil and simmer for one to two minutes until the mixture becomes syrupy.
Stir in the lemon rind and almonds and turn the mixture into the baked pie crust.
Leave to cool, then store in the refrigerator.
Serve with ice cream.
