    apricot jam

    cake flour

    baking powder
  • pinch of salt
  • Syrup
  • 65
    ml
    butter
  • 30
    ml
    apricot jam
  • 250
    ml
    white sugar
  • 5
    ml
    almond essence
  • 1
    Litres
    hot water
 

Method

50 minutes
 
Preheat the oven to 180 ºC and butter a 22 x 30 cm ovenproof dish, or spray with nonstick spray.
Cream the butter and sugar together until light and fluffy.
Beat in the eggs one at a time, beating well after each addition. Stir in the apricot jam.
Sift the dry ingredients together and stir into the butter mixture.
Mix all the ingredients for the syrup and pour into the prepared dish.
Spoon the pudding batter on to the syrup and bake for about 50 minutes until done.
Serve with custard.
