African vegetable stir-fry and sweet potato crisps

  • butter for frying
  • 3
    leeks
  • 1
    large onion
  • cabbage
  • 250
    g
    spinach
  • 50
    g
    sunflower seeds
  • salt and pepper to taste
  • CRISPS
  • 3
    sweet potatoes
  • 750
    ml
    oil
  • 5
    ml
    cumin
  • 10
    ml
    sea salt
 

Method

 
Melt butter, fry leeks, onion and cabbage, cook until soft. Add spinach and sunflower seeds, stir to coat with butter. Season. Thinly slice sweet potatoes. Cook in preheated oil, fry until golden and drain on greaseproof paper. Lightly sprinkle with cumin and sea salt.
