Easy vegan brownies

Ingredients

 
  • 1 3/4
    cup
    cake flour
  • 2
    cup
    caster sugar
  • 1
    cup
    cocoa powder
  • 1
    tsp
    baking powder
  • 1
    tsp
    salt
  • 1
    cup
    water
  • 1
    cup
    coconut oil, melted
  • seeds from 1 vanilla pod

Method

 

Preheat the oven to 175°C.

In a large bowl, mix together all dry ingredients – flour, sugar, cocoa powder, baking powder and salt. Add the wet ingredients – water and coconut oil, along with the vanilla seeds. Stir until well combined and lump-free. Grease and flour a 20 x 30cm baking tin and spoon in the mixture.

Bake for 40 – 50 minutes, until the top is no longer shiny and the centre feels soft but not liquid when pressed down. Let cool for at least 10 minutes before removing from the pan and cutting into squares. Possibly even better enjoyed the next day.
