One-pot Spanish rice

Ingredients

 
  • 2
    cup
    brown rice (or use brown & wild rice mix)
  • 500
    g
    Eskort Gold Medal Pork Sausages
  • 2
    cup
    vegetable stock
  • 1-2
    cup
    water
  • 1
    can
    chopped tomatoes
  • 150
    g
    broccoli, chopped
  • 1
    tsp
    minced garlic
  • 1
    tsp
    cumin
  • 1
    tsp
    paprika
  • 1
    can
    butter beans
  • 1
    can
    red kidney beans
  • 1/2
    tsp
    cayenne pepper (optional)

Method

 
In a large pot, chop the sausages and fry in some olive oil until golden on the outside.

Add the onion, rice and spices to the pot and stir together.

Add the vegetable stock and chopped tomatoes.

Leave to simmer for 45 – 60 minutes, adding more water if necessary.

Separately, steam or microwave the broccoli until tender.

Once the rice has cooked through add the broccoli and the beans. Stir together and simmer for another 1 – 2 minutes.

Serve hot.
