Peach and Parma ham salad

    g
    Parma ham slices
  • 3
    Peaches (seed and skin removed then sliced into wedges)
  • 50
    g
    Parmesan shavings
  • rocket
  • Balsamic reduction
  • 1
    Tbs
    Mustard vinaigrette
  • MUSTARD VINAIGRETTE:
  • 40
    g
    white wine vinegar
  • 40
    g
    Dijon mustard
  • 120
    g
    olive oil
 

Method

 

For your vinaigrette, combine the mustard and vinegar in a bowl and whisk together. Slowly add the oil while whisking. Season with salt to taste.

Rinse our rocket, toss with some of your mustard vinaigrette and season with salt and black pepper. Add your peach slices, Parma ham slices and Parmesan shavings and finish with some balsamic reduction.
